You’re right – such a good way to use up those veggies! I’ve been known to throw some zucchini and peppers in every once and a while, much to my hubby’s dismay. :)

I LOVE my pot too! If you’re in the market, watch the Canadian Tire flyer… I often see them on sale for 1/2 price!
