It just helps to thin out the food colouring, allowing it to cover the dry pasta more consistently. If you’re prepping the dyed pasta on your own without kiddos around, I suggest using rubbing alcohol instead of vinegar. It evaporates more quickly and seems to create brighter, bolder colours. :)
