Hey Jenn! Yes, soaking the dates helps HUGELY!!! They’re MUCH softer after a little bit of time in the water. :)

We make a similar ‘cookie’ with dried cherries and almonds and dates, and the dates tend to give me a hard time in the food processor. Does soaking them actually help them to soften a bit? Love this recipe idea, can’t wait to try it for our son.
