Mmmm… Apples and peanut butter. Such a good combination. Even better? Apple peanut butter salad that incorporates crunchy grapes, sweet bananas and the yummiest peanut butter ‘dressing’ too. Miss G loves this salad and it makes for a perfect after school snack {or breakfast or lunch in Grae’s opinion}. It’s easy to make too!
First up, the dressing… All you need is come all-natural peanut butter {ours has flax and chia already mixed in}, some milk, a little bit of pure maple syrup, and some vanilla.
Then you basically pour everything into a small bowl and give it a really good mix with a fork or small whisk. Depending on the consistency of your peanut butter, you may want to thin out your peanut butter dressing with a little extra milk, so feel free to add some if needed.
As for the rest of the salad, you’ll ned some chopped apples, some halved grapes, some sliced bananas, and some peanuts to sprinkle on top.
Now all you need to do is dump the apples into a bowl…
Add the grapes and give them a good stir.
Next, gently add in the bananas and incorporate them into the mix.
To serve it, simply dish out a bowl of fruit…
Sprinkle some peanuts on top…
And finish it off with a generous amount of peanut butter dressing. Done!
Apple Peanut Butter Salad
- 2 generous tablespoons of all-natural peanut butter
- 2 tablespoons of milk
- 1 teaspoon of pure maple syrup
- 1/2 teaspoon of pure vanilla
- 1 red apple, cored and chopped
- 1/2 green apple, cored and choppd
- 3/4 cup of grapes, sliced in half
- 1/2 banana, sliced
- 1/4 cup of peanuts
Yummmmm! I love how this easily adapts for very small helpers. Do you think honey might work as a substitute for the maple syrup? I have actually never tried (and thus do not have on hand) maple syrup. *hangs head in embarrassment*
Definitely! If it’s a thick, creamed honey you may have to add a little extra milk to thin it out, but a liquid honey should replace 1:1 very easily. :)
We haven’t tried the recipe yet, but I have rectified my maple syrup deficiency and will be sampling it properly this week! ;-)
