Mmm… Energy balls! One of our very favourites and a go-to when in need of a quick treat for a play date or school lunches. These little balls of goodness are packed full of nutrients and are a perfect sweet treat or little pick-me-up on a long afternoon {not that we’ve had any of those lately ☺}.
We’ve made these so many times now that we no longer measure ingredients – it’s more of a just chuck things into the food processor sort of process – and surprisingly, they always turn out delicious! {Gotta love a forgiving recipe!}
And while the nut/seed butter, honey, and oat part pretty much always remains the same, we regularly switch up the other ingredients depending on what we have in the pantry. Some of the other regulars? Naturally sweetened cranberries, pecans, chia seeds, cocao nibs, pumpkin seeds… Almost anything goes, really! That being said, both Miss G and I have a thing for really good, really dark chocolate, so this particular version is definitely a favourite. Here it is…
Oatmeal Chocolate Chunk Energy Balls
- 1/2 cup of all-natural peanut butter {or other nut/seed butter}
- 2 tablespoons of honey {we always use a local honey when possible}
- 2 teaspoons of coconut oil {optional depending on the consistency of your nut/seed butter}
- 1 teaspoon of pure vanilla
- 1 cup of old-fashioned oats
- 1/3 cup of chocolate chunks {we chop a 90% bar}
- 1/4 cup of unsweetened shredded coconut
- 2 teaspoons of ground flax
Place the first set into a food processor {or high quality blender} and process until the mixture is smooth. Add the second set of ingredients and pulse until the mixture begins to come together in a large clump. Scoop 1 tablespoon spoonfuls of the mixture into your hand at a time, giving the ‘dough’ a good squeeze before rolling it into balls. Store in an airtight container in the fridge or enjoy immediately.
